Grilled Halloumi & Pesto Stuffed Pepper


If you know me or follow me on Twitter, you will know that I am probably not most inspirational person ever when it comes to food. Infact, I can't really say I'm ever that healthy #cakeislife.

Only up until recently when my mum rocked up with a new exercise bike (and the sickening sight of my un-toned thunder thighs were staring back at me in the mirror) did I actually start considering exercising and eating a bit better. As I sit down all day at work, I basically get next to no exercise (besides running up and down the stairs which leaves me on the verge of destruction) and I need that beach bod ready for when I go on holiday in September!

I've also been pinning tonnes of things on Pinterest like 'How to stay motivated' etc which I think subconsciously has actually inspired me to get my wobbly arse into gear. I find if I do 45 minutes on the bike before blogging, I am 10x more productive than before and it makes me want to work harder next time. It also gives me a chance to catch up on loads of Youtube videos too.. Killing 2 birds ftw.

So anyway, I always see loads of quick fire Facebook videos on the 'Proper Tasty' page (which I always read in a cockney accent) and I am always left feeing inspired to be more adventurous with my meals. I came across this recipe not too long ago and it has taken me a little longer than it should have to make it. I only ever really bother to make stuff like this is when I know we have the all the ingredients in, because y'know.. When you're hungry, you're hungry. I wanted to share this recipe with you which only takes around 20 mins to prep and cook and it tastes delicious! Yay :)

Also can we just take a moment to appreciate the most photogenic piece of food I have ever made? Presentation is never really my strong point when it comes to meals but this seemed to work out quite well! 

You will need: 
1-2 Peppers (depending on your appetite)
Salt & Pepper
Cherry Tomatoes
Halloumi
Green Basil Pesto
A few squeezes of Lemon
Olive Oil

How to make:

Preheat your oven to 200c/ Gas Mark 6. Start by taking your peppers, cutting them in half removing the seeds and stalk. Sprinkle a bit of salt and pepper on each piece and start chopping your cherry tomatoes in half. If you don't have cherry tomatoes, just dice up bigger ones to your preferred size then add into the pepper as an alternative. Start to add in the pesto in random dollops. Squeeze the lemon a couple of times over your peppers. Drizzle a small bit of olive oil over the top and pop in the oven for 15-20 minutes.

Whilst that is in the oven, dice your halloumi and add on top of your stuffed peppers when cooked. Pop under the grill for roughly 5 minutes then serve with a salad garnish and enjoy! :)

  2. This is such a great recipe! I love hallumi (I am from Cyprus hand we eat hallumi with everything) but I haven't tried it like this! I will definitely cook it :)
